I love the simplicity of this dinner. All you need is some salsa chicken (chicken breasts with salsa and taco seasoning slow cooked on high for 4 hours), corn tortillas, chihuahua cheese, and an air fryer. I was able to assemble and air fry these while we waited for our rice to cook. Dinner done in 20 minutes!
PS Make sure to warm your corn tortillas before you start assembling them so they don’t crack when you roll them. I also set them seam side down, close to other, and spray with a little olive oil to give them a good crunch. Air Fry for 4-6 minutes depending on how crunchy you want them.
PSS Use a toothpick to secure them shut if you don’t trust your rolling skills.
