I chose to slow cook a rump roast for these wraps but to make them even faster just use roast beef deli meat, sliced thick. These would be great for lunches, too!
Roast Beef Wraps with Broccoli Slaw
- 3 cups broccoli slaw
- 1/4 cup chopped fresh dill, or 1 tbsp dried
- 1 tbsp white vinegar
- 1/4 tsp sugar
- 1/4 cup mayonnaise
- 2 tbsp sour cream
- 2 tbsp horseradish
- salt and pepper
- provolone or Havarti cheese
- 1/2 lb deli roast beef
- whole-wheat wraps
- Make the slaw: Toss the coleslaw mix, dill, vinegar, sugar, mayonnaise, sour cream, horseradish, 3/4 teaspoon salt, and pepper to taste in a bowl.
- Layer the cheese, roast beef and slaw in the center of the wraps. Fold in the sides, then roll up tightly. Cut in half and serve with chips, if desired.
