Ritz Cracker Meatloaf

My son, Jack, loves this meatloaf recipe. He made it with me about 2 years ago and it is now known “Jack’s Meatloaf”. You can feel the extra love in the smashed Ritz crackers. 😉

Ritz Cracker Meatloaf
Ingredients
- 2 lbs 85% lean ground beef
- 2 eggs
- 1 tbsp onion powder
- 1 sleeve crushed Ritz Crackers
- 1 tbsp Worcestershire sauce
- 2 tbsp ketchup
- 1/4 tsp pepper
- BBQ Sauce for serving
Instructions
- Preheat oven to 350 degrees.
- Mix all ingredients (minus BBQ Sauce) in a large mixing bowl.
- Portion into mini loaf pan and bake for 30 minutes.
- Top with favorite BBQ sauce!
